Philosophy & Mission

• Commitment to quality

• Excellence in customer service

• Continuous innovation

At the heart of our endeavour is the company's founder and namesake,
Ponti Miltiadou.

Ponti's vision for a retail bakery café in the heart of the Melbourne CBD was realised in 1992,
when Ponti and his family established a Bakery cafe located at KPMG House, 161 Collins Street, Melbourne. Ponti's Collins Street bakery-café soon became a popular destination for
patrons in the city. The business served between 700 and 800 patrons per day.

Whilst the café continued to flourish, Ponti began to focus his energy on servicing the food industry with quality, freshly baked, innovative breads at a wholesale level. This came about as a result of demand from other cafes, coffee shops and sandwich bars that wanted the same products that
made the Collins st Café a success.

The greatest innovation in Ponti's Bakery was the introduction of the large "boutique" tin loaf in 1996-97, which is characterised by an increase in sandwich yield per loaf, while eliminating wastage and increasing cost effectiveness. This format of baking superseded the previous popularity of cob loaves,
especially in sandwich catering. The Boutique loaf has since been adopted across the industry and known by other descriptions such as "catering", "special tin" or "jumbo" loaf.

In 2000, the bakery-café on Collins St was sold in order to focus exclusively on wholesale baking,
supplying a range of breads to other businesses. A suitable property was purchased in Campbellfield for the purpose of establishing a home for Ponti's Bakery.
We continue to bake in these premises today.

We are proud to say that as of 2010, Ponti's Bakery is HACCP accredited,
further solidifying our commitment to quality and safety in food standards.

In 2011, we identified a market shift towards flat breads. To meet this need and to expand into
retail we imported and installed a "flat – bread" baking line to produce
a range of authentic style village flat breads.

The current range of Village flat breads consists of : Lebanese bread, Greek souvlaki pita, Italian Piadina, Cyprus pita pockets and Pizza bases.
